This is an easy and delicious chicken recipe. The drippings from this chicken go great over mashed potatoes (but be careful they are pretty high in calories).

This chicken goes great with so many different sides like mac and cheese, steamed vegetables, rice, mashed potatoes, or dinner rolls.

To make this chicken you will need:

  • Chicken: This recipe is very versatile. I used boneless chicken thighs but you can use whatever cuts you have on hand (legs, breasts, etc). If you are using bone in you may need to increase the cooking time.
  • Vegetable oil: To cook the chicken in the oven with.
  • Butter: I recommend using unsalted butter so you can control the salt in the recipe. Traditionally this recipe is made by melting the butter in oven first but you can just use your microwave.
  • All purpose flour and corn meal: The coating for the chicken. Make sure you get cornmeal and not corn starch.
  • Salt, pepper, paprika, garlic powder, onion powder, and dried marjoram: The spices for the chicken.

You’ll also need a casserole dish (9 x 13 inch).

Begin by preheating your oven to 375 degrees. Melt your butter (traditionally, the butter is melted in the oven, I used the microwave).

In a plastic bag (the Amish use paper sacks) add the spices, flour, and corn meal. Close and shake well.

Mix the butter with the oil (make sure your butter isn’t too hot beforehand, it should cool while you are mixing the other ingredients).

Dip each piece of chicken in the butter and oil then add them to the bag and shake. You can do two to three pieces of chicken at a time.

Pour the remaining butter and oil in the casserole dish and place the chicken on top. Bake for 35 minutes at 375 degrees. You may need to increase the time if using bone-in chicken. A meat thermometer should read an internal temperature of 165º.

🥡 How to store leftovers

Store any leftovers in an airtight container in your refrigerator. Leftovers will be good up to four days after making.

  • Shake the bag well before adding the chicken so the spices, flour, and cornmeal mix.
  • This recipe is great hot but cold leftovers are also good.
  • The drippings are great over mashed potatoes (watch the calories, though).

Ingredients

  • cup vegetable oil

  • 6-8 boneless chicken thighs you can also use other cuts such as legs or breasts, if desired
  • 1 cup all purpose flour
