For this Bananas Foster french toast we are taking a bit of a family friendly shortcut by omitting the rum, and using prepared caramel sauce. It makes for an incredible breakfast that is quick to make and sure to please everyone at the table!

What is the Best Way to Cook French Toast?

There are a few different ways that you can cook French toast. But, in my opinion, the best way to cook it is in a cast iron skillet.

Cast iron skillets hold heat really well, which means that they will cook the French toast evenly on both sides. Plus, you can use them on the stovetop or in the oven.

If you don’t have a cast iron skillet, you can also use a non-stick skillet or a griddle. Just make sure to heat it over medium heat so that the bread doesn’t burn.

Tips for Making the BEST French Toast

  • Ensure your ingredients for the custard (french toast batter) are room temperature to start.
  • Stale bread or oven-dried bread works best for this recipe.
  • Whisk the custard well and until the eggs are completely incorporated.
  • Cook the French toast over medium heat. If your pan gets too hot, the bread may get brown too quickly without giving the custard time to cook through. You may have to adjust the heat as you go.
  • When making larger batches, to keep the French toast slices warm as you cook, preheat your oven to 300 degrees Fahrenheit. Place the cooked French toast slices on large baking dish in the oven. Don’t keep them in there longer than 20 minutes, or they’ll begin to dry out.

How to Store Leftover Bananas Foster French Toast

Bananas Foster french toast is best served immediately after preparing. You can store the different components separately in the fridge, in air tight containers, for up to 3 days.

Reheat in a dry skillet or in the microwave on a heat-safe plate. If using the microwave, make sure to heat in short intervals and keep an eye on it so it doesn’t dry out.

About the Ingredients for Bananas Foster French Toast

Dairy – We are using a combination of heavy cream and whole milk for the best flavour and results. You can definitely substitute both with non-dairy milk or lower fat milk products but the fat from whole milk and cream combined makes a world of difference in flavour and gives the french toast a creamy, custard-like interior. Make sure your dairy or substitutes are room temperature.

Sugar – We are adding just a touch of sugar to the batter. You can absolutely skip this entirely if you prefer a less sweet french toast.

Vanilla – Using pure vanilla extract will give the toast the best flavour but you can absolutely substitute with artificial vanilla if that is what you have on hand.

Egg – Use room temperature eggs for the best results.

Spices – Warming spices and salt really makes Banana’s Foster something truly special.

Oil – Using a combination or butter and oil gives us the best of both worlds – it doesn’t smoke and burn when frying but has all that buttery flavour.

Bread – Use a thicker cut good quality bread. Pass on the sandwich bread and look for brioche bread or something similar. Slightly stale bread works best for french toast. For the French toast shown in the photos, I used Honey White from the amazing Breadsmith Baking Company. They are based in Ohio but have outlets all over the Midwest and other areas, check their website for a location near you.

Caramel sauce – I would highly recommend making your own caramel sauce while it is still warm for the best results. You can also use store bought caramel sauce and warm it up. I like to use my favourite homemade caramel sauce recipe. Use as little or as much as you like.

Bacon – Good quality thick cut bacon provides a little savoury break from all the sweetness, plus the crispiness is a nice textural contract to the french toast. Make the thick cut bacon ahead of time, placing crispy slices on paper towel to absorb the excess grease. Set aside.

Banana – Go for just very firm but just ripe bananas if you are going to opt for cooking them in the caramel sauce, or just very perfectly ripe if you are going to slice and add them directly to garnish the french toast.

Cherries – Using maraschino cherries is a good option to be able to enjoy this dish year round. That said, try swapping in fresh cherries when they are in season. Just pit and halve the cherries and pan roast them as described in the recipe. The blistered cherries can be make ahead of time as well.

How to Make Bananas Foster French Toast

Yields: 3 Servings | Prep time: 15 Minutes | Cook time: 10 Minutes

Ingredients:

  • 1 3/4 cup of whole milk, room temperature
  • 1/2 cup heavy cream, room temperature
  • 2 tablespoons light brown sugar
  • 1 tablespoon granulated sugar
  • 1 tablespoon + 1/2 teaspoon pure vanilla extract
  • 1 large egg, room temperature
  • 1 tablespoon ground cinnamon
  • 1/3 ground nutmeg
  • 1/4 ground cloves
  • 1/4 Sea salt
  • 1/4 Cup unsalted butter, divided
  • 1 tablespoon olive oil, divided
  • 6 slices of bread
  • caramel sauce (store bought or homemade)
  • thick cut bacon, cooked until crisp
  • 1 banana
  • 10 – 12 Maraschino cherries

Directions:

In a large bowl combine whole milk, heavy cream, brown sugar, sugar, pure vanilla extract and an egg, mix well.

Add cinnamon, nutmeg, cloves and salt and continue to mix. Pour mixture in a long casserole dish. Set aside.

Over medium heat place a large cast iron skillet, melt 2 tablespoons of butter and a 1/2 teaspoon of olive oil.

Dip 2 slices of bread into the French toast batter making sure both sides are well covered and place in your skillet.

Cook until golden brown on both sides, flipping halfway. Remove, add more butter and olive oil if you like (I always like to). Repeat steps until all the french toast is made.

In a separate skillet add a tablespoon of butter and several cherries, heat should be on medium high. Add a teaspoon of sugar. Allow cherries to blister then remove to a bowl ready to assemble to Bananas foster french toast.

Slice a banana lengthwise and place 2-3 slices on top of each serving of French toast.Alternatively you can slice the bananas into thick cut coins and heat them in a skillet with the caramel sauce for a more traditional presentation.

Pour a generous amount of warm caramel sauce over each serving of prepared French toast, add slices of bacon and blistered cherries then dust with powdered sugar.

Serve and enjoy.
