I am a peanut butter person and have been known to eat an apple just so I could have some peanut butter with it. So over Christmas an old friend made some peanut butter fudge for me and I could not resist. It was so good but it had so many carbs and that is why I came up with this easy keto peanut butter fudge recipe.

Its super easy with only 3 ingredients and it only takes a few minutes to whip up. I shared some with my diabetic father as well as my hubby and son and they all gave it a thumbs up! The best part is each piece only 1.1g net carbs! Trust me you only need 1 piece but even if you had two or three it won’t blow your diet. Now let me show you how to make some sugar free peanut butter fudge!

3 Ingredients For Low Carb Peanut Butter Fudge

I have tried this a few ways and I still have a little more experimenting to do. However today’s batch was perfect and all I used was natural peanut butter, Swerve confectioners sweetener and butter. That is all.

If you like keto sweet treats I recommend buying a big bag of Swerve confectioners online. It’s cheaper and I use this for all my sweet recipes. They make a granular one and it’s good but this seems to work better. I also like Swerve brown sugar sweetener. It’s just like regular brown sugar with 0g net carbs.

Low Carb Peanut Butter

I really like this brand of peanut butter from Aldi. It doesn’t have any added sugar and there are 4g net carbs per 2 tablespoons which is pretty good for peanut butter. There are also many low carb brands on Amazon. I know people have talked about Teddie all natural peanut butter. I have not tried it personally but it has the same macros as the Aldi brand I used.

How To Make Keto Peanut Butter Fudge!

Make sure you butter is softened. If you are in a hurry (and I’ve done this) you can microwave the butter for 15 seconds or so to make it softened. But it’s better to do it the right way because if you get it wrong in the microwave it will liquify too much and not work in the recipe. So watch it carefully.

In a mixing bowl cream the butter and Swerve confectioners sweetener until nice and creamy. Then add in the peanut butter and mix again until well combined. It should look like the photo above.

Next spoon it into your containers. I used these two smaller glass containers. I wasn’t sure I had enough for a larger glass dish so I had to use two. Smooth it with a spoon or spatula. I had a little trouble getting it perfect but I didn’t care. I just wanted to eat it!

NOTE: if you want to make it easier to come out of the container, line the container first with wax or parchment paper. Cut it so the ends come all the way up the sides so you can lift it the whole thing out by the paper to cut into squares.

I did not do that and it still came out fine but I was impatient and if I did that it might have have looked a little neater.

As you can see above my squares were not so neat and smooth on top. If that bothers you for some reason, note that you can cut the uneven part off and make it look more perfect. I’m telling you in case you wanted to give this as a gift.

Easy Keto Fudge Recipe Notes And Tips

  • This only requires 3 ingredients but it’s important you use the lowest carb peanut butter you can find and the Swerves confectioner sweeter. Granular sweetener may make it grainy because you are not heating it to make it dissolve.
  • Line your containers with wax paper or parchment paper if you want to make it easier to cut when it’s done.
  • This recipe made 28 pieces of fudge. The nutritional information will change if you make bigger or smaller pieces. I felt 1 piece was very satisfying because it’s so sweet but you can play around with the size to fit your the amount of carbs you want to have.
  • Please store this in the freezer or refrigerator because it can get pretty soft if left out. I keep it in the freezer and grab one when I want something sweet and it’s still soft enough to eat.

Well I thoroughly love this recipe and I can’t wait to try more flavors. If you crave something sweet every now and then this is a good one to keep in the freezer. Also I like to make this diabetic fudge for my father in law so he can indulge and not worry about his sugar. So if you have a diabetic in your life this is a nice keto dessert for them to try.

Ingredients

  • 1 cup peanut butter, no sugar added
  • 1 cup butter, softened
  • 2 cups Swerve powdered sweetener

Instructions

  1. Add the butter and Swerve to a mixing bowl. Cream together.
  2. Add in the peanut butter and mix until nice and creamy.
  3. Spoon into a baking dish and either freeze or refrigerate until hardened. It should take about 2 hours.
  4. Take out and cut into squares and place in a sealed container and store in the refrigerator or freezer. The fudge can get soft so I don't recommend keep it out on the counter.

      Hi Tedi, I used two small glass dishes – one was about 4.5″x6.5″ and the other was 5″x5″. You can use any size baking dish you want. That will just effect the size of the pieces you cut. Here is the nutrition information for the whole batch. You can then divide by the number of pieces that you make yourself. Hope that makes sense. Please let me know if you have any other questions.
