    Prepare the Ingredients

Bring a small pot of lightly salted water to a boil over high heat. Thoroughly rinse produce and pat dry. Cut pretzel rolls into 1" cubes. Cut any large broccoli florets into bite-size pieces (make sure you are still able to skewer them).

  2. Swiss Fondue for Two Recipe - Home Chef (4)

    Prepare the Apples

Add 1 cup water and 1 Tbsp. salt to a medium mixing bowl. Stir to dissolve salt. Core apple and cut into 3/4" dice. Place diced apples into salted water and mix around with your hand or a spoon for 1 minute. Place colander in the sink and drain apples for a few minutes. This process will prevent the apples from oxidizing, or browning.

    Prepare the Broccoli

Once water is boiling, add broccoli and cook 1-2 minutes, until broccoli is bright green and slightly tender but still crunchy. Remove broccoli from water with tongs or a slotted spoon and place in colander (remove apples to a plate). Reserve pot of hot water (it will help to keep fondue warm later). Run broccoli under cold tap water to stop cooking process and shake colander to drain water completely.

    Toast Pretzel Bread

Place a large pan over medium heat. Melt 1/3 of the butter and add pretzel bread to pan. Toast the bread while stirring until lightly browned, about 3-5 minutes.

    Prepare the Cheese Sauce

Place a small pot over medium heat. Add remaining butter to pot and melt. Once butter is melted, add flour, whisk together, and cook 2 minutes. Whisk in sherry and cook for 1 minute. Slowly whisk in milk 1/2 cup at a time to help prevent any lumps. Bring to a gentle boil, add a little pinch of nutmeg to taste (be careful - nutmeg can be strong). Reduce heat to low, and cook 3 minutes. Remove from heat and whisk in Swiss cheese. Taste sauce and season to taste with salt and pepper.

    Plate the Dish

If you have the traditional setup for fondue, use that for serving. If not, place cheese sauce into a heat proof bowl (make sure bowl is larger than the pot of hot water) and place bowl on top of pot of hot water used to cook broccoli. The steam from the hot water will keep the fondue warm. If fondue seems too thick, whisk in 1 Tbsp. reserved hot water. Place the fondue onto a platter and arrange pretzel bread, cherry tomatoes, broccoli and apples around it. Use skewers provided to pick up items and dip them in the cheese sauce.

Vegetables. The rule of thumb for vegetables: If you like it raw, you'll like it dipped in cheese. Fondue makes getting your daily serving of veggies as easy as can be! Fresh veggies like broccoli, snap peas, and carrots add a satisfying crunch, and blanching these ahead of time is perfect.

What is the difference between Swiss fondue and French fondue? ›

In Switzerland, the main ingredients are Gruyère and vacherin from Fribourg, in equal parts (it is called, fittingly, 'moitié – moitié'). In France, it is often made from French cheeses like Comté, Beaufort and Emmental - which is the recipe for the classic Fondue Savoyarde, from the Alpine region of Savoie.

Is broth or oil better for fondue? ›

When making fondue, the first thing to consider is what type of ingredients you want to use; if you are a vegetarian, you may prefer the oil. The oil is also a healthier option because it contains no fat or calories. However, if you like meat and cheese, the broth is better because it has more flavors.

What cuts of meat are best for fondue? ›

The best cut of beef for fondue

What vegetables are good in fondue? ›

Blanched vegetables: broccoli, asparagus, green beans, snow peas, or snap peas. Blanch in a pot of lightly salted boiling water for a minute or two to soften them up just a bit. Drain them well before putting them out on a serving tray.

What cheese is best for a fondue? ›

The best all-around cheeses for fondue are fontina, Gruyère, and gouda. If you aren't sure what to pick, use even amounts of these three. Together are lush and complex. THE TABLE. Fondue parties must be approachable to your guests, so a large central buffet is recommended for easy access to the dippers and fondue pots. A gold tablecloth instantly adds class (and catches the drips for easy clean-up!). Scatter your two fondue pots and center a large wood board for dipping décor.
