Crockpot Potato Soup Recipe

This recipe is so easy to make! Just throw it in the crockpot before you go out for the day, and use your potato masher (or immersion blender) right before you serve... It's hot and ready for you by the end of the day! I love to serve this cozy soup on cold nights with some buttery homemade rolls and a green salad!

It's been pretty cold here this week... I'm not complaining, we need to rain we've been getting and I'm thankful for it! But we are all a bit chilly and this is the perfect dinner to warm us all up before our evening activities!

  • Medium or 4 quart Crockpot
  • Cutting board & Chopping Knife
  • Potato Masher or Immersion Blender

Ingredients

Large Diced Potatoes - You can use russet potatoes, Yukon Gold Potatoes, or Red potatoes.

Different potato varieties have distinct textures and starch levels, which can affect how they behave in soups and stews. Yukon Gold and red potatoes have waxy textures and lower starch content, which means they are less likely to disintegrate and hold their shape better when cooked in a stew... If you want to have some chunks of potatoes in your final dish;)

Chicken Stock or chicken broth

Milk

Shredded sharp cheddar cheese.

Sour cream You can substitute sour cream with heavy cream or even cream cheese... Do Not Add Till Right Before Serving.

Green Onions or Chives

Cream of chicken soup.

Yellow Onion

Bacon - You need Crispy Bacon (and Bacon Grease for extra flavor.)

A little bit of salt and ground black pepper!

Instructions

Add to Crockpot:

  • 1 medium diced onion (diced into small pieces)
  • Add 2 pounds of largely diced potatoes. (They will get small as they soften and get mixed in.)
  • Add chicken broth, milk, and cream of chicken soup.
  • Cover and let cook all day on low setting, or at least 3 hours on the high setting.

Right before serving:

  • Your potatoes will be breaking down to one degree or another depending on how long you've cooked it. f potatoes are still too large and not broken down after stirring, use your potato masher or immersion blender to break them down a bit till it's the texture (creamy or chunky) that you prefer.
  • Before serving: In a medium skillet, cook bacon on medium heat for about 7 minutes or till nice and crisp. Then put bacon on a paper towel. Crumble bacon pieces for garnishing.
  • Add 2 tablespoons of bacon grease from the skillet to your crockpot for extra flavor. (If you don't want the bacon grease in the soup, try cooking your bacon on paper bags in the oven, like I did here, for the perfect crispy bacon!!!)
  • Stir in the sour cream, 2 cups of cheese, and ½ the green onions.
  • Cook until cheese is melted.
  • GARNISH individual bowls with crispy bacon pieces, shredded cheese, and green onions.

Leftover Crockpot Potato Soup

My favorite thing to do with leftovers is to pour them into a freezer-safe mason jar and freeze it for the next time I need a hot meal in a flash... Just microwave and enjoy! You can also store leftovers in an airtight container in the refrigerator and use them within 5 days.

This creamy soup recipe is total comfort food and so versatile! Some soups are for more developed pallets, but potato soup is loved by even the pickiest eaters! We make lots of cozy soup recipes here in Idaho and this is our favorite soup recipes.

There are so many substitutions you can use if you are out of one thing or another! For Example... If you are out of sour cream or heavy cream, you can use cream cheese. If you are out of russet potatoes you can use Yukon Gold, or frozen hash browns if needed.

(Note there is a huge difference And it's much better with real potatoes.)

If you are out of chicken broth or stock, you can use cream of chicken soup. If you are out of green onions, you can use chives.

Cream Of Chicken Soup?

Yes, cream of chicken soup adds protein and chicken pieces (instead of ham used in other potato soup recipes.) The creamy chicken soup adds flavor, creaminess, and moisture this soup needs!

HOWEVER, if you don't have the cream of chicken soup, or want a homemade substitute, make creamy chicken gravy and use that instead!

Which Potatoes Are Best In Crockpot Potato Soup Recipe?

I live in Idaho... Land of potatoes! We grow them taters big in Idaho, and We're lucky enough to buy them straight from the farmer.

My favorite potatoes to use in loaded potato soup are Russet and Yukon gold potatoes! Russet potatoes have a great texture for this soup and Yukon gold are just creamy potatoes all on their own!
