Here we are with another weekly vegetarian meal plan! This time, we are featuring foods from my favorite season of the year…summer!

We are officially in summer my heart is happy. This vegetarian meal plan is so exciting to me because we are including recipes that involve less cooking (okay, maybe some grilling – because that’s what summer is all about), and we are using all of that delicious seasonal produce!

This refreshing salad is a great way to start the week off! A sweet and savory dish, this is made with melons, Quorn (meatless “chicken”), and a tasty and creamy yogurt curry dressing. The best part? It’s so simple to put together and can be done in 20 minutes or less!

This salad also gets an A+ in presentation, as it can be served right in the melon shell. Once you try it, it’ll become a staple, especially on those hot summer days!

MAKE AHEAD TIP: Chop up the melon and pepper ahead of time, so all you have to do is cook the Quorn meatless pieces and put the salad together.

TUESDAY: Mexican Street Corn Salad

If you’ve ever had Elote (Mexican street vendor corn on the cob), you’ll love this Mexican street corn salad, which is the salad version of it! This salad is healthy but filling and features a greek yogurt dressing, instead of the traditional mayonnaise dressing for a lighter feel. You can serve this hot or cold and can you can throw it on anything, such as eggs, tacos, chips, or you can eat it by itself!

MEAL PREP TIP: This recipe serves 8 people, but be sure to make enough to have as a side dish or full meal throughout the week.

SERVING TIP: Pick up some mini tortillas to turn this salad into a delicious taco filling.

WEDNESDAY: Portobello Mushroom Burgers

Our Portobello Mushroom Burgers are the perfect summer burger! The portobello mushrooms create a perfect meaty texture, along with the melted sharp cheddar and our delicious fancy sauce, these burgers will become your go-to vegetarian burgers!

PREP TIP: Chop all of your burger toppings and make the fancy sauce ahead of time, so all you have to grill the mushrooms and assemble the burgers.

THURSDAY: Grilled Watermelon Salad

Make another refreshing salad on this hot summer day! Our Grilled Watermelon Salad will become another sweet and savory essential dish in your salad. This salad includes watermelon (duh!), but the unique blend of mint and basil add a refreshing flavor profile that couldn’t be more summer-worthy!

MEAL PREP TIP: If you want to enjoy this salad more than once this week, make sure you keep the veggies in one container, watermelon in another, and dressing in another so the veggies don't get soggy!
