No ideas how to cheer through the St. Patrick’s Day without a Guinness or two?

Do you have a sweet tooth or children? These keto green cookies are going to be so much fun, then!

They are very easy and quick to make. I bakedthem after I’d found this recipe here, and I’m really glad I did. In the process of making the keto cookies, I realized even the batter itself is so delicious, I’m already gathering ideas for where else to use it.

I’ve taken the recipe and left out half of the coconut oil because it was already in the sunbutter. Next time I’m going to leave it out completely so that the batter gets more solid without putting it in the fridge for 30 minutes. I’ve also upgraded the recipe with some Ceylon cinnamon. I love cinnamon, but you can add any spices you wish. Oh, and as for the green color - no worries, the keto cookies are edible, and the green is a result of baking soda and sunflower seeds reacting together.

Keto Green Cookies

Ingredients

  • 1 large egg
  • 3.5 oz sunbutter
  • 0.5 tablespoon coconut oil - (I think you can leave it out if the sunbutter contains it)
  • ½ teaspoon vanilla extract
  • teaspoon baking powder - rounded
  • teaspoon baking soda - rounded
  • 1 tablespoon sweetener - (98% erythritol and 1% stevia mix, e.g. Truvia)
  • ½ teaspoon Ceylon cinnamon

Instructions

  • Line a baking pan with some parchment paper and preheat the oven to 350°F (175°C).

  • Put all the ingredients into a medium bowl.

  • Using a hand electric mixer, mix the ingredients until you get smooth batter.

  • Using all of the batter, make 12 ball shapes and place each onto the baking pan, lined with parchment paper. If the batter is too soft (which happened in my case), put it in the fridge for half an hour or so.

  • Take some boiling water and dip a fork into it, then press down the tops of the balls to make a cookie shape. Repeat for every cookie (re-dip the fork each time).

  • Bake the cookies in the upper portion of the oven for about 9 minutes. As every oven heats a bit differently, watch carefully for browning so the cookies don’t burn.

  • When the cookies are done baking, put them on a cooling rack and let them cool down completely. They will slowly turn green with cooling, and turn even darker green as they sit.

    I made a batch of these and they're good, but I feel like it needs a nutty or crunchiness to it. Would you have any suggestions that would go well? Like macedamias, pecans or chocolate chips?
